In the early 1800’s, European immigrants settled in the Rio Grande
do Sul area of Brazil. The fertile, grassy plains were perfect
for finding new and better opportunities. These Brazilian settlers
were excellent horsemen, so they quickly became adept at raising
and herding cattle. The settlers became known as Gauchos.
Gauchos had a unique type of cooking called Churrasco.
Large portions of prime meats were skewered and skillfully roasted
to perfection over the pits. Gauchos would carry bountiful portions
of meats, fruits and vegetables to the dining table and using
traditional knives, they sliced the tender pieces of the meat
onto the plates. The succulent, skewered meats were then served
generously to each person.
This is the tradition of the Brazilian Gauchos
that has its unique style of preparing and serving food to their
families and friends. In addition, it is a staple diet of Brazilian
life today - and the experience we would like to share with you
at SAMBA.
